Food treatment in flooded areas

06/09/2013

Regarding the current floods the Czech Agriculture and Food Inspection Authority (hereinafter CAFIA only) for public purposes as well as for food premises operators repeats basic safety rules for treatment of foodstuff damaged by flood water and likewise :
  • It is necessary to bear in mind that flood water represents radically higher risk level than water from public water supply system. During the flood the water is contaminated by numerous health threatening materials, e.g. from industry or agricultural production. Flood water could be also contaminated by micro bacteria from waste materials.
  • People should under no circumstances eat food affected by flood water, especially unpackaged food.
  • Only hermetically packed foodstuff can be used with undamaged surface, thoroughly cleaned and disinfected including hardly accessible parts e.g. cover parts which could cause contamination.
  • Consumption of foodstuff with sensor based changes, especially taste, smell or color should be avoided.
  • Food safety of cooled foodstuff cannot be guaranteed if it is imposed to temperatures higher than 6 °Celsius for more than 4 hours. Applies especially to meat or dairy products.
  • Food safety of frozen foodstuff cannot be guaranteed if it is not kept in sufficient freezing devices for more than 2 hours.
  • Even foodstuff not directly affected by flood water may represent a health risk. If powdery foodstuff, e.g. flour or cereals, is affected by extreme humidity, presence of fungus or mycotoxins has to be considered.
  • CAFIA recommends to all food producers or food retail premises operators to eliminate all flooded foodstuff. CAFIA also offers cooperation preparing the reports on damages and to suggest solutions to all registered food producers and retail premises operators affected by floods.
