CAFIA checked the quality of Vysočina salami

Within a targeted inspection action, the Czech Agriculture and Food Inspection Authority (CAFIA) checked the quality of non-perishable meat products marketed under nomination “Vysočina” salami. The inspection concerned the quality of salamis of various producers; samples were taken at seven establishments of retails in the South Moravian Region.
Out of 10 samples taken, 5 failed to comply with the requirements laid down by the respective decree.
Four samples of salami showed presence of bone pulp which denotes the use of mechanically separated meat. However, this is inadmissible for products such as “Vysočina” salami.
Furthermore, three of the non-complying samples failed to comply with the “water activity”, which may affect the shelf life of the products.
Two samples failed to contain the required content of net muscle protein.
Remedies were imposed on the inspected persons, at whom the non-complying products were found, and administrative procedure concerning imposition of a fine will be commenced with them.
The State Veterinary Administration, which is the competent authority for surveillance over production of meat products, was informed of the results of the inspections.
With regard to the detected facts, CAFIA plans actions focused the same way also in other regions.
