The Czech Agriculture and Food Inspection Authority has recently dealt with a complaint from a consumer who bought a bread in January and put it in the freezer for some time. However, when she wanted to eat it at the beginning of this week, she found a mouse baked in it. The consumer complained at the Regional Public Health Authority which referred the complaint to the CAFIA Inspectorate in Brno.
Our inspectors then carried out an inspection in the bakery in Břest u Kroměříže which manufactured the bread and which is run by Evžen Křiva. In the first instance, he did not want to let them in. He changed his mind when the inspectors called the Police. It was found that the establishment did not comply with many hygiene rules: in the manufacturing and distribution premises there was a mess, on window sills there was dirt, floor and walls were filthy, at some places the ceiling was peeling off or was mouldy, no one from the staff wore protective clothing, especially head covers, in the bowl and dough mixer there were rests of old dough. In the manufacturing premises there were objects not related to the production, for example, cleaners. Moreover, documents on staff training in hygiene were not presented. The bakery manufactured even though the flour sifter that is used to remove coarse impurities has been out of operation for a long period of time.
The inspectors also found out that business operator did not comply with his legal obligation and did not put critical control point system (HACCP) in place. This system serves to eliminate system errors in production.
Due to a large number of deficiencies the inspection did not finish until late night. The owner of the business was ordered to immediately remove all deficiencies. The CAFIA will initiate administrative proceedings against him.
Such conditions in manufacturing premises and approach of business operators are exceptional; hygiene requirements in production are generally at a good level.
