One fourth of restaurants failed during check of deep-frying oils

Inspectors of the Czech Agriculture and Food Inspection Authority (CAFIA) assessed deep-frying oils as unsuitable for human consumption in each fourth restaurant or fast food premise inspected.

Based on unsatisfactory results of the inspection carried out in previous years, CAFIA inspectors carried out an inspection activity in 2018, of which aim was to verify whether public catering operators – in particular restaurants and fast food premises use, when preparing meals, burnt deep-frying oils and fats showing high degree of thermal decay.

During the inspection activity, the inspectors assessed safety of deep-frying oils and conditions of deep-frying equipment in the total of 77 public catering premises and assessed here 93 samples of frying oils.

In 26% of inspected premises the inspectors detected using of so-called burnt oil which was assessed as a foodstuff unsuitable for human consumption based on sensorial assessment (smell, taste, colour, presence of carbonised remnants, etc.) and on laboratory detection of so-called total polar materials and polymeric triacylglycerols (PTG).

Keeping good deep-frying practices and hygiene requirements for deep-fryers were constituents of the inspection. In several cases the inspectors detected contamination of the equipment by solidified oily impurities.

The inspected persons who violated the legislation were ordered to remove the detected deficiencies and CAFIA will initiate an administrative procedure on imposition of a fine with them.

With regard to the unsatisfactory results of this inspection activity, CAFIA will continue with inspections of deep-frying oils at the public catering premises in the future as well.
