Results of inspections carried out this year by the Czech Agriculture and Food Inspection Authority (CAFIA) in public catering premises show that the situation in the area of the most serious violations – serious violations of food hygiene threatening the health of consumers – remains on the same unacceptable level compared to the previous year. CAFIA has been dealing with inspections of public catering segment since 1st January 2015.
In 2015 CAFIA inspectors had to close down 144 premises of public catering due to very serious violations of hygiene regulations. Since the beginning of 2016, CAFIA has closed down 24 restaurants and further public catering providers so far which is similar to the situation in the previous year.
In 2015 CAFIA carried out 15,051 inspections in the segment concerned. Violation of legislation was detected in 32.1% of cases. During the inspections carried out in January and February 2016, the inspectors found out violation of legislation in 35.2% of cases. As regards inspections focused on appropriate level of cleanness of the premises, unacceptable situation was detected in 37% of cases, which is much higher compared to the operators which are subject to inspections of CAFIA in long-term horizon. In a range of cases violation of legislation pointed to complete unawareness even of the most elementary obligations required by the food law by certain food business operators.
The reasons for immediate closure of the premises remain similar to the ones in the previous year. For example layers of grease, dust and remains of foodstuffs on the kitchen equipment, dishes and floors, missing water supply, presence of pests, excrements and gnawing, vast moulds of surfaces and cooling equipment, failure to comply with technological procedures during the preparation of meals, and procedures directly threating safety of served meals, etc.
With regard to the persisting poor situation in the field of public catering, CAFIA will carry on to exert pressure on the operators in order to protect consumers in the maximum extent possible.
