The Czech Agriculture and Inspection Authority (CAFIA) has checked 522 places selling burčák and half fermentd grape must (PFGM) so far. CAFIA took 62 samples, out of which 15 samples have already been analysed. 2 samples failed to comply with legislation. Both cases concerned producer Dalibor Koubek based in Přibice 101 (according to the accompanying documentation submitted by the seller). CAFIA took these samples in premises of Miloš Ondráček on Okružní street in Prostějov and on Náměstí 1. května in Kuřím (stall). The samples failed to comply as regards the amount of added sugar. Legislation permits ethanol originating from added sugar amounting to 2% of the volume, however, the laboratory analysis proved presence amounting to 6.11% and 7.31%. This year, CAFIA plans to check an amount comparable to the previous year, when 657 places of sale were checked and 78 samples were taken, out of which 10 showed as unsatisfactory.

During inspection of burčák and PFGM, CAFIA focuses, inter alia, on hygiene of sale and sensory requirements – taste, smell and colour of the beverage as well as labelling and accompanying documentation. By isotope values of water measured by nuclear magnetic resonance, CAFIA laboratory in Brno verifies geographical and botanical origin of grapes from which particular burčák was made. Presence of synthetic colours is also monitored as well as ethanol from added sugar or amount of added water.

Burčák is a name protected by national legislation of which use is reserved for partially fermented grape must made from grapevine harvested and processed in the Czech Republic in the given year. Its selling season is between 1^st August and 30^th November. However, a product of identical parameters and produced from grapes harvested outside the CR could be sold under name “partially fermented grape must”, not under name “burčák”. Possible misuse of the name burčák is regarded as misleading of consumers and in such cases, CAFIA initiates administrative procedure on imposition of a fine.
