Inspectors of the Czech Agriculture and Food Inspection Authority (CAFIA) focus, in these hot days, on the inspection of risk foodstuffs, i.e. highly perishable foodstuffs. These include in particular meat and milk products, poultry and fish products, delicatessen and confectionery products. Food goes bad more quickly at high temperatures. Microorganisms that can cause foodborne illnesses multiply rapidly in hot and humid environment; therefore food is literally a breeding ground for them.

Although the period of sale of half-fermented wine is only from 1 August to 30 November, the Food Inspection Authority will not remit fines for its unauthorised “baptism” with water. During the half-fermented wine season the Inspection Authority took samples of this half-fermented grape must to check whether exogenous water was not added to it. Similarly as in the case of wine, water cannot be added to half-fermented wine because “multiplication” of wine or half-fermented wine is prohibited by law.

The Czech Agriculture and Food Inspection Authority (CAFIA) has equipped its laboratory in Brno with a unique instrument for detecting adulterated food. The SNIF-NMR and IRMS instrument (Site-specific Natural Isotope Fractionation Nuclear Magnetic Resonance and Isotope Ratio Mass Spectroscopy) allows monitoring of the distribution of isotopes at different places in molecules contained in foodstuffs using nuclear magnetic resonance method. This method will allow detection of adulteration of wine, juices, honey, and other food products and to establish the origin, for example, of aromatic substances, spirits, vinegar marinades, or sauces.
