The CAFIA inspectors visited 6 sugar refineries in Bohemia and 7 in Moravia, in which they took altogether 27 samples of sugar. The samples were laboratory analysed for quality parameters stipulated in legal regulations, such as minimum contents of saccharose, and colour in a solution or maximum percentage of ash contents permitted. Attention of the inspectors was also paid to the contents of “invert sugar”, which is a solution of two different kinds of sugar (glucose and fructose), formed by addition of a small amount of acid as an active agent and, subsequently, by heating up the solution of saccharose. The invert sugar creates very fine granules and is used in confectionery for production of sweets and candies.
The results of control confirmed that the local sugar refineries produce sugar of good quality. With the exception of two cases only, when samples did not complied with one requirement for quality (colour in a solution), all the samples analysed met the legislative quality requirements.
In conformity with a definition set in a relevant decree, by sugar we understand saccharose processed as granules, icing, cubes or loafs. It is possible, sometimes, to add some additives or fragrances or spices in saccharose. The government decree divides sugar into several groups, such as extra white sugar, white sugar, half-white sugar, and shaped sugar (cubes, bridge, loafs), liquid sugar, natural sugar, etc. And how does the natural sugar look like? It is a loose, granular, slightly sticky substance of light yellow to almost light brown colour.
